    I tried the Faust ganache, and I was struck by how smooth it was. The taste is very very delicate, and I'm afraid that my taste buds haven't yet reached the point where I'm able to get most of the nuances. But interestingly enough, even several minutes after eating the chocolate, I could still taste the echo of the chocolate's flavor in my mouth, lingering like a seabreeze.

    I don't remember what the ganache was called:

    It was richer than any chocolate I have ever tasted. Usually I don't like darker chocolates, but this one was surprisingly good. It had a subtle sweetness without being bitter. There was definitely a nutty flavor, which I later discovered was hazelnut.
